rocky’s matcha Kanayamidori Matcha is a ceremonial grade, single cultivar matcha sourced from Miyazaki, Japan. It’s best characterized by its milky appearance, scent, and mouthfeel that results from a delicate, weeks-long shading process in which the leaves are exposed to less direct sunlight. The leaves are then lightly steamed and fully roasted to bring out a rich flavor profile balancing a robust umami and pronounced roasted character.
Kanyamidori is an incredibly unique cultivar—in-part due to its higher level of amino acids, in-part due to its carefully considered harvesting process. Kanayamidori is perhaps most associated with making sencha but this unique cultivation as matcha showcases its versatility.
