rocky's matcha signature Houjicha, also known as hojicha, is sourced from Mr. Kiyoharu Tsuji, an award-winning, fifth-generation tea farmer. While traditional matcha consists of unroasted, shade-grown tencha ground into a vibrant green powder, houjicha is typically made from bancha, more mature leaves that are harvested later in the season, and roasted at high temperatures.
Our Houjicha uses stems and leaves from Tsuji's tencha, slow-roasted at a relatively low temperature over a charcoal flame to preserve its flavor. The roasting transforms the leaves from green to a tannish brown and develops the tea's signature profile: sweet, nutty, and toasty, with a subtle smokiness and creamy mouthfeel. As a result, houjicha carries less caffeine than matcha, making it a great alternative for an afternoon cup.
